Pickled Daikon and White Cabbage Kimchi by Chef Joel Baylon

Chef Joel Baylon's Pickled Daikon with White Cabbage Kimchi recipe, perfectly paired for NON8 Torched Apple & Oonlong.

Serves: 2-4 people

Ingredients:

  • Daikon
  • Aromats
  • White wine vinegar
  • Mirin
  • Dried kombu sheet
  • Water
  • Sugar
  • White cabbage kimchi ( selected Asian supermarket retailers )

Method:
Salt daikon for 20 minutes and rinse them set aside.

For pickle liquid add all ingredients into a pot bring to boil then simmer.

Place daikon in sanitised jar, and pour pickle solution into jar and let keep for 2 weeks until ready to serve.

Served alongside with kimchi and best suited for fish and steam rice.
